Tasmania's windswept landscapes, rugged wilderness, and crisp air provide the perfect backdrop for the island's world-renowned whisky distilleries. Yet, nestled in the charming town of Oatlands, stands Callington Mill, an architectural gem with a story that masterfully intertwines the island's rich industrial heritage and its burgeoning whisky scene.

When one thinks of the picturesque island of Tasmania, the mind wanders to the rugged wilderness, crystalline lakes, and world-renowned whisky distilleries. But tucked away in the charming town of Oatlands, stands an architectural gem with a story that has more in common with the island's whisky heritage than meets the eye. Speaking of course about the beautiful Callington Mill, a living testament to the island's industrial past and the only fully operational Lincolnshire tower mill in the Southern Hemisphere.

Built in 1837 by local businessman and agriculturist John Vincent, the Mill was initially designed to grind flour and other grains for the growing community, but John was also thought to have an illegal side operation. For many years, it churned out some of the finest flour in Tasmania and (on the side) distilling spirits which was illegal at the time. However, like many relics of the past, it fell into disrepair and closed its doors in 1892.

The Mill's resurrection is a tale of passion and determination. A painstaking restoration project began in 2005, which saw every inch of the historic structure returned to its former glory. The four magnificent sails, spanning 92 feet across, now catch the Tasmanian winds as they did in the 18th century.

Tasmania's whisky industry continues to make a name for itself on the global stage. Today, Callington Mill is not only a testament to Tasmania's rich industrial past, but also a living, breathing example of the island's commitment to preserving its heritage.

Callington Mill Distillery was established in 2017 by a group of passionate whisky enthusiasts, a perfect symmetry between the Nicolas Family & the Ibrahim Family, who sought to create a unique Tasmanian whisky experience. Callington Mill Distillery is a shining example of Tasmania's innovative spirit and dedication to quality, housing a new 100% Tasmanian-made turnkey distillery. As the winds of change continue to propel the island's whisky industry to new heights, Callington Mill Distillery remains a steadfast symbol of tradition and craftsmanship, releasing whiskies for the world to savour.

Callington Mill Distillery, with its historic windmill and commitment to traditional craftsmanship, has embraced innovation through its Leap of Faith series. This daring range of whiskies showcases the distillery's creative spirit and willingness to experiment, pushing the boundaries of Tasmanian whisky. The following five remarkable expressions have been selected from Leap of Faith series to share with the New Zealand Market: Emulsion, Symmetry, Sherry Fusion, Entropy, and Audacity Cask Strength.

Symmetry Single Malt

Symmetry Single Malt Whisky, a collaboration between Callington Mill's John Ibrahim and Tasmanian whisky godfather Bill Lark at the Old Kempton Distillery. Aged in 100L Australian Tawny and Apera Casks, it features a nose of ripe fruit and toffee, with flavours of caramel, orange peel, and maple syrup. Awarded Silver at the 2022 IWSC with a score of 90 and awarded Double Gold 2022 San Francisco World Spirits Competition, this whisky is a classic example of balance and complexity.
